Au Gratin Potatoes

I am using Yukon gold potatoes but you can use any kind of potato you'd like.

2 or 3 lbs Yukon gold potatoes

3 tbsp butter + more for baking dish

1 onion, thinly sliced

2 tsp salt

1 ½ cups cheddar cheese, grated

1 ½ cups gouda, grated

In a large pan add the butter, once melted add in the onions. Cook down for 2-3 minutes.

Season with salt and pepper, onion salt and garlic and cook for 5-7 more minutes.

Add in the flour and mix/whisk it in. Cook for 1 minute.

Add in the heavy cream whisking in as you go to help incorporate all the onions with the flour into the heavy cream. It'll instantly start thickening up.

Add in the fresh thyme sprigs, 1 cup sour cream and let simmer for about 10 minutes on a low heat.

Remove the thyme sprigs, and in batches add in the cheddar and gouda until fully melted.

Step 7

Thinly slice your potatoes using a mandolin or a very sharp knife. The thinner you can cut them the better.

Prepare your baking dish, I used a square one, rub it over with softened butter or non-stick cooking spray.

Layer the bottom of the baking dish with about 1 cup of the cheese sauce, on top of the cheese sauce start layering in the potatoes. Once all the potatoes are in pour over the rest of the cheese sauce.

Step 10

Bake at 350 degrees for 40-60 minutes. If your potatoes are sliced on the thinner side your entire dish will be ready closer to 40 minutes after cooking, if they're thicker it will take closer to the hour if not longer. If the top of your dish is getting too dark you can cover with foil.

Step 11

Once cooked, let rest for 15-20 minutes before serving.
