Step 1
To prepare the steak, you can either buy thinly sliced steak, or buy your go to steak, I used skirt steak that I sliced into 2 inch strips.
2 lbs thinly sliced steak
Step 2
To a large skillet, add the oil, set to medium high heat, once hot, add in the steak, move around into an even layer and and let cook undisturbed for 4-5 minutes.
1 tbsp oil
Step 3
Season with the salt and pepper add the garlic and cook for 2-3 more minutes.
1 tbsp salt
2 tsp black pepper
3 garlic cloves, minced
Step 4
Add in the diced onion and jalapeños, if you're concerned about the spice level you can remove the seeds from the jalapeños or only use one jalapeño instead of 2. Cook for about 5-7 minutes.
1 onion, diced
2 jalapeños, diced
Step 5
Add in the chopped tomatoes, mix to combine and cook this down for 12-15 minutes or until most of the tomatoes have fully broken down. You can use more or less tomatoes, just depends on how saucy you want your dish to be. At this point taste the dish and adjust any seasonings if needed.
5 roma tomatoes
Step 6
Turn off the heat and stir in the chopped cilantro.
¼ cup cilantro, chopped
Step 7
Serve the bistec with beans or rice and some tortillas.
