1 tbsp olive oil

1 tbsp Garlic Powder

1 tbsp Trader Joe’s Elote Seasoning

1 tbsp Chile Lime Seasoning/Tajin

½ tsp Cumin

1 tsp Salt

1 tsp Black Pepper

1 pint Pint heavy cream

¼ cup sour cream

1 cup Oaxaca cheese

½ cup cotija cheese

Step 1

To a large skillet, add the butter and olive oil. Once hot, add in the jalapeño & onion, cook for 5-7 minutes or until the onion is starting to look translucent.

Step 2

Cut the cauliflower into smaller florets(or buy the bags that already come cut up). Add to the skillet along with all of the spices. Mix to combine & cook for 5-7 minutes.

Step 3

Add the heavy cream, sour cream, 1/2 cup of the Oaxaca cheese & 1/4 cup of the cotija cheese and stir to combine.

Step 4

With oven preheated to 350 degrees. Pour the cauliflower mixture into a baking dish, top off with the remaining Oaxaca cheese. Bake for 20-25 minutes.

Step 5

After baking the cauliflower, garnish with more queso cotija, Tajin & cilantro.
