Jalapeño Artichoke Dip

1 cup artichokes(chopped)
1 cup pickled jalapenos(chopped) + 1/4 cup pickling liquid
1 cup mayo
1 cup sour cream
1 cup cotija cheese
2 cup queso chihuahua or mozzarella
1 block cream cheese

Step 1
Chop the artichokes and jalapenos until you have 1 cup of each.
Step 2
Add the chopped artichokes and jalapenos to a large bowl.
Step 3
Mix in 1 cup of mayo and 1 cup of sour cream.
Step 4
Mix in 1 block of softened cream cheese.
Step 5
Stir in the cotija cheese and 1 cup of whichever cheese you are using. I used queso chihuahua mixed into the dip.
Step 6
Lastly stir in the 1/4 cup of the jalapeno pickling liquid.
Step 7
Pour the dip into a baking dish and top with the remaining cup of cheese for the melty gooey topping.
Step 8
Bake at 350 degrees for 20-25 minutes, or until the cheese is browned and melted.
Step 9
Serve with chips and enjoy!
