5 russet potatoes
oil for frying
salt
lime

Wash potatoes if you are not peeling them.
Step 2
Thinly slice potatoes with a mandolin or super sharp knife.

Soak them in water, drain and repeat until the water runs clear.
Step 4
Place potatoes on towels to fully dry.
Step 5
In a deep sauce pan/pot, add the oil & let get fully hot. Around 350 degrees if you have a thermometer. My pan was on medium high heat.
Step 6
In batches, add the potatoes & cook stirring frequently for around 3-4 minutes.
Step 7
Drain them onto a wire lined baking sheet and immediately toss them in salt.
Step 8
Enjoy as you please or top them with lime juice & hot sauce.
