1 stick unsalted butter

¼ cup all purpose flour

4 cups whole milk

2 lb cheddar cheese

½ cup pickled jalapeños, diced

1 onion diced

1 jalapeño, diced

1 packet taco seasoning

Step 1

To a large pot on medium heat, add the butter and let melt.

Step 2

Once the butter is melted, add in the flour and start whisking immediately to avoid any clumps forming. Cook for 2-4 minutes so the flour cooks through.

Add in the 4 cups of milk and start whisking to warm the flour through.

Step 4

For best results, make sure you are grating your own cheddar cheese.

In batches, whisk in the cheddar cheese until fully melted and well combined.

Once all of the cheese is melted, mix in the diced pickled jalapeños.

Reduce heat to low until you're ready to serve.

Step 8

To serve your nachos, add tortilla chips to a plate, top them off with nacho cheese, the ground beef, more nacho cheese and garnish it off with shredded lettuce, diced tomatoes, pickled jalapeños and a big dollop of sour cream!

Step 1

Add the ground beef to a large skillet on medium high heat. Start breaking it down into smaller chunks. Let cook for about 5 minutes.

Add in the diced onion, jalapeño and the taco seasoning. Mix to combine and cook for 7-10 minutes.

Step 3

Add in the diced tomatoes and cook for 5-7 more minutes. Taste the meat and add any salt/pepper if needed.
